Vegan Banana Chocolate Tarts
Vegan Banana Chocolate Tarts with thanks to Nadia's Healthy Kitchen
For the chocolate base
- 110g (1 cup) oat flour – plain oats ground into a flour in the food processor
- 50g (1/2 cup) ground almonds
- 2 tbsp cocoa powder
- 2 tbsp maple syrup or liquid sweetener of choice
- 3 tbsp coconut oil or dairy-free spread, melted
For the banana filling
- 235ml (1 cup) Planted oat drink with banana
- 2 tbsp cornflour
- Pinch of turmeric for colour (optional but recommended)
- 1/2 tsp agar agar (optional but recommended)

Method
- Mix together the oat flour, ground almonds and cocoa in a bowl. Pour in the maple syrup and coconut oil, then press into 4 mini tart pans and freeze while you make the filling.
- Add the filling ingredients into a small saucepan. Mix until all the cornflour has dissolved, then cook on a medium/high heat stirring continuously.
- Take off the heat just before it starts to boil. Leave to cool a little, then pour into the tart bases. Chill in the fridge until set.
