Vegan Berry Rice Pudding

Ingredients

 

50g pudding rice

450-500ml Planted Oat Drink 

100g berries of choice (fresh or frozen)

 

Method

 

Add the pudding rice along with the Planted milk into a saucepan and bring to a quick boil.

Lower the heat and simmer gently for 35-40 minutes. Stirring every 5 minutes or so.

Once the rice is soft and the mixture is creamy, take off the heat and transfer into serving bowls/dishes. Top with more milk if you want a thinner consistency.

Add the berries in a small heat-proof bowl and microwave on high for 1 minute.

Top with the warm berries and an optional sprinkle or chopped nuts or nut butter.
